It was Halifax Food Festival this weekend and not surprisingly I came home with a bag full of cakes

Couldnt resist these cupcakes, so pretty and sparkley, the flavours are vanilla, double choc, lemon, cookies and cream and carrot



And we had to ask what was in this "Russian slab" but once I heard I had to buy some! They take bits of all the other cakes they make, mix it all together with jam and the sandwich it between 2 swiss roll slabs and then squish it all down!



I also got a slice of coconut cherry cake and we had ice creams. Boyfriend bought more sensible things like fishcakes for dinner and jam, lime marmalade and turkish delight (bleugh).

Shame the food festival is only once a year! Although probably a good thing, I had to resist buying cookies and fudge on top of all the cake XD

I know right?! What could be better than a cake made of cake!

New theory: if you cram enough unhealthy things into one thing, it goes full circle and is healthy again.

This is proved by science.

Can I apply this theory by eating nothing but cake?

Oooo we had a food festival at Leicester which had loads of cakes, was very good

I love cupcakes cause you can be so extravagant with the decoration!

Need to find out how to do lemon flavor icing now...

Just make your icing like normal and put a tablespoon of lemon juice in, might need a little bit more icing sugar to make up for the extra liquid Can also put lemon juice and lemon zest in the cake mix
